Brocheta Bistro was founded in McAllen in 2023 by longtime restaurant operator Gilbert Colunga, bringing more than thirty years of hospitality experience to a locally owned restaurant built around fresh food, genuine hospitality and taking care of people.

The Man Who Opened the Door

Art Acevedo hired me at Zoe’s Kitchen and introduced me to Mediterranean food — an opportunity that changed the direction of my life. The knowledge, encouragement, and experience he gave me eventually helped inspire the creation of Brocheta Bistro.

His influence lives on in the food we serve, the hospitality we share, and our commitment to always cook with a purpose.
